Cordyceps are a fungi that infects the host and then instructs the victim to climb as high as possible, where it will die and sprout fruiting bodies. Eventually, the fruiting bodies will erupt and eject spores to the wind, which will travel far and wide looking for new hosts... we will tell you everything here.
Cordyceps can have the reputation of a creepy fungi, but it has a friendly side, it can also provide plenty of health benefits. Cordyceps uses include treating cancer, anti-aging, increasing energy and more... but this will be the subject of our next post.
These are Cordyceps militaris a variety we collected locally, near our farm. This awesome mushroom fruits every January with amazingly cold or frozen temperatures.
